Celebrity chef Spike Mendelsohn will be opening a new, all-day eatery inside the St. James — the massive sportsplex that opened earlier this fall in Springfield.
Vim and Victor will include a market café, lounge, communal tables and bar. Eater DC reports that menu options may include specialty pastas, salads, smoothies, juices, coffee and more. Grab-and-go and full-service seated dining will be available. Catering may also be in the offing.
The St. James is a massive sports, health and wellness destination. At 450,000 square feet, the St. James includes a full, premium health club, ice rink, swimming pools, water park, tennis, yoga studies, turf fields, batting cages, medspa and more.
Mendelsohn (real name Evangelos Spiros Mendelsohn) is the chef behind Good Stuff Eatery, Santa Rosa Taqueria, and We, The Pizza in the D.C. area. He has been in multiple shows on Bravo TV, including Top Chef Chicago, Life After Top Chef, and on Food Network’s Iron Chef America and Spike TV’s Bar Rescue.
