The longtime donut and vegetarian coffeeshop Elizabeth's Counter will be closing this Sunday, Aug. 28.
In a post on Instagram, the owner wrote that the hand-made donut model was not doing well in the current economy.
Owner Rob Krupicka opened a Sugar Shack restaurant at the location years ago, before transforming it into Elizabeth's Counter in early 2020. Elizabeth's Counter offered vegan, sugary donut goodness alongside a variety of other offerings.
Elizabeth’s Counter was named after the mother of Captain Gregory, the historic figure who reportedly invented putting a hole in the donut. Captain Gregory is the namesake of Krupicka’s successful speakeasy next door. (No word on the future of the speakeasy at this time.)
In its place, the owners of Elizabeth's Counter plan to launch a new concept called Railbird Kitchen, with comfort food and vegan offerings. The new restaurant will open in the former Elizabeth's Counter location at 804 N. Henry St. A railbird is defined as someone who is a spectator, particularly of horse racing.
