La Fiamma opened its door for business this week.
The owners of Paradiso in Franconia handed the reins to the next generation, who renovated and reopened as La Fiamma. The business will remain in the family under the direction of Gonzalo and Melina Pardo.
The head chef is Victor Bercian. "Chef Bercian is originally from New York, NY. He has over 20 years of cooking experience. His expertise is in Italian food, but he can make almost anything you an imagine. He’s a great mentor and a great friend and we can’t wait for you to meet him and taste his creations," the Pardos wrote on the new restaurant's website at lafiammaitalian.com.
Paradiso was open for nearly three decades, since 1991. In a message on the company's Paradiso Facebook page back in October, the owners wrote:
"Dear Patrons and Friends, Paradiso will be closing its doors on October 11, 2020. We will be undergoing some renovations and will be reopening in Mid November under the new name La Fiamma (Translation: 'The Flame'). It will be the same family owned business, just a new generation.
It's definitely bittersweet news as we end Paradiso's amazing 30 year streak of serving the community. However, we are SO excited for this new chapter and we hope you will continue to support us! We are thrilled to share the new updated ambiance and food with our community. We will keep you posted with any updates on this page as well as La Fiamma's page.

Hours are Sunday through Thursday from 3 - 9:30 p.m.; Friday and Saturday 3 - 10 p.m.
